dining room opens onto the
terrace and
pool with a splendid view of St. Kitts. The elegant yet light menu deftly blends local ingredients with a cornucopia of

standard rooms and

restaurant is a discovery, serving some of the finest
cuisine on Nevis with menus that change every hight. The chef has done a wonderful job of embracing the local tastes with a big-city gourmet twist. Just steps above the
pool, the
restaurant offers vistas of palm groves and the Caribbean Sea from its
bar and dining
terrace. You never know what's likely to be featured: A very smooth and spicy conch chowder might get you going, or an equally delectable coconut-fried lobster with
grilled pineapple and green-chile salsa, providing a sweet island flavor. The standard fillet of grouper, snapper, or mahi-mahi that occupies every menu in the Caribbean is also here, as the chef tends to prepare only what he can obtain locally. A lamb shank, another fairly standard menu item is delectable here, with an array of local vegetables. The
lunch menu is more limited but still filled with some surprises tannia fritters (instead of conch) for example. Caribbean Connoisseur 1998 Michele Evans. Open since 1989, Mount Nevis Hotel attracts many repeart guests, both couples and families. What they're vying for are spaces in the
