JJ has come a long way after sailing the first time on Vendredi 13 he went around the world gaining experience in cooking, sailing and learning different languages. Fifteen years later he decided to set up his own business in Marigot Bay surrounded by lush vegetation and mangroves and fresh sea breeze. His restaurant and bar is now a favorite night spot for many, including foreigners who make it their bounding duty to be there to savor his special dishes. His Wednesday night finger-licking callaloo crab is the favorite dish for many people. On Wednesdays his promise is transformed into an atmosphere of fun as the music of local bands and the fragrance of a variety of dishes fill the air: Creole Crabs, lobster, shrimp and other goodies. When quizzed as to whether he would be willing to give someone the recipe for his delicious crab sauce which he calls Special JJ Crab he said It's no secret. If anyone wants the recipe they can get it, but I doubt they will be able to do it as good as I do, he said with a smile! He added: It's my own creation. I did not get it from any book!. The lovely view of yachts at anchor gives the Shack its great atmosphere along with the surrounding lush vegetation making the Shack a true tropical paradise. In the evenings the light attracts a variety of fish and sea life to add to the entertainment. The Shack is popular with both tourists and local residents. The yachties love it because they are able to dinghy over and tie up to the restaurant. The Shack serves a menu of international cuisine with a local flavor. The Conch fritters are a must!! Along with dishes such as Shrimp Calypso, Chicken breast stuffed with plantain, spinach and coconut, Grilled Mahi Mahi, pan-fried red snapper, lobsters Creole. There are also a variety of pasta dishes, 16oz T-bone steaks and grilled Lamb chops, truly something for all pallets. Every Tuesday The Shack has a Steak blow-out night. Serving an 8oz strip loin steak w/ French fries and fresh garden salad. The Shack is equally popular for lunch. Open daily from 12 noon to 11 PM serving lunch and dinner. Named after Walter Boudreau, the legendary schooner captain who sailed into Marigot Bay and built the first hotel fifty years ago, the elegant restaurant showcases Boudreau memorabilia and historical pictures. Open for breakfast, lunch and dinner, you may start your day in a relaxed, casual setting overlooking the bay and enjoy the more formal, colonial setting in the evenings. Experience the original bar, famous among yachtsmen worldwide, with a panoramic view of the bay. The bar has been restored to its former glory with its original lighting and signage. Open until 11pm. Excellent choice for a light meal (for lunch or dinner!). Restaurants in Castries. Louise and Normand's favorite restaurant, The Coal Pot has been a fine dining experience for the last forty years. Michelle Elliot and her French husband, Xavier, own and manage the restaurant - voted Restaurant of the Year in 1999. Michelle is the elegant hostess, Xavier is the chef, sans pareil. New World cuisine, the marriage of the freshest Caribbean ingredients with simple, yet exquisite, French cooking methods, is the Coal Pot's trademark. At lunch, a daily special is served alongside dishes like Greek and shrimp salads. Fresh local fish, prepared in a variety of excellent sauces, is an ideal lunch choice. Dinner, with linen service, is a relaxed affair. Coquilles St. Jacques and smoked salmon add a continental flair to local delicacies, such as curried chicken served in a coconut shell. There is also a selection of fine wine. The Coal Pot's ambiance is as special as the cuisine. The walls of the wood open-air structure are decorated with colorful Caribbean art. These acrylic and water designs are Michelle's imaginative creations. Just a few feet away from the dining tables, the waters of the Vigie Marina lap against the coral stone beach. Chef Jack had been travelling the world for 15 years when he arrived in St. Lucia almost 9 years ago, he bought with him a great appreciation for indigenous ingredients and he has developed his own style of fusion cuisine that combines fresh local ingredients with his French cooking methods and flare for creativity. Cosmos, Marigot Bay Water sports' Owner. At the back, up the hill, The Inn On The Bay. Local Fishing Experience. Peter, a young licensed fisherman from the village of Marigot, runs this activity. Not the usual deep-sea fishing on a big yacht. Instead, it's all about the fun of sport fishing the real St. Lucia way, on a comfy small boat with an expert local fisherman to show you the water and help you make some great catches. He usually try bottom fishing or trolling in parties of two to four persons along the island coast, just a short distance from Marigot Bay. Fishing gear and tackle are provided. Popular catches include jack, tuna, dorado, barracuda, mahi-mahi, red snapper and grouper weighing anywhere from one to 10 pounds - 15 pounds if you're lucky! Peter can go out any day of the week. Mornings (7:00 a.m. to 11:00 a.m.) or late afternoons (3:00 p.m. to 6:00 p.m.) are suggested. Please reserve at least 24 hours in advance. Drinks are available for sale on board, but you can bring your own. Price: for two persons, US$100.00 for 3 hours. Windsurfing and Kitesurfing. The Club Mistral Windsurfing Centre Skyriders Kitesurfing Centre are located on the grounds of in Vieux Fort, St. Lucia. The windsurfing centre is equipped with 2002 Mistral windsurfing boards and North rigs, whilst the kitesurfing centre features Naish kites and boards. The centres are located on the Atlantic coast at the southern end of this fun-filled Caribbean island, facing the full force of the trade winds. Both centres are really easy to find, as they are on the main Castries-Vieux Fort road, approximately 2-minutes drive from Hewanorra International airport. Both are located on St Lucia's best windsurfing beach, on the south-east coast of the island close to the town of Vieux Fort. Just 1000 yards out to sea lie the twin Maria Islands - windswept and uninhabited, these remain unchanged since Carib Indians roamed the beaches and now provide sanctuary for many unique species of flora and fauna. As is typical for all of the region, St. Lucia has a tradewind season which lasts from December through to May, however during June and July there are also some good windsurfing days. At the white sandy beach of Anse de Sables in Vieux Fort, the prevailing winds blow cross-onshore from the left with generally flat water over the major part of the sailing area. Apart from the reef break approximately 1km offshore, which is clearly identifiable by the white water surrounding it, the entire sailing area in the bay is safe and sandy-bottomed so you can sail barefoot. The launch area is also free of anything 'nasty' underfoot, with negligible shorebreak towards the upwind end of the bay. Further downwind the shorebreak can be more challenging, particularly when the winds have been consistently high for a few days. There may also be more swell and chop towards the centre of the bay at these times. During the winter months (Dec-Mar) a 'shortie' wetsuit or lycra top is useful against windchill. Facilities at this beach include 2 restaurants, toilet and beach facilities (loungers, beach umbrellas etc). There is usually safety-boat cover operated by one of the windsurfing centres located here. The windsurfing centre is equipped with thirty (30) 2002 Mistral boards and fifty (50) rigs from North Sails. Come along and do battle with the big one with Captain Chris Hackshaw and his experienced and friendly fishing team. Chris's Grand father started charter fishing around the beautiful and very productive waters of St. Lucia over forty years ago and subsequently passed on a wealth of knowledge. Presently Chris's cousin has the St. Lucia Blue Marlin record of 707 pounds caught at one of our International Bill fishing tournaments. They presently operate three sport fishing vessels: a Customized 38' Bertram Special Sea Hunter powered with twin Detroit Diesels capable of speeds to 25 kts, a 31' Bertram Bahia Mar Blue Boy powered with twin Perkins 275 h.p. Diesels capable of 31 kts and a 32' Formula Miss-T powered with twin 250 h.p. Perkins Diesels capable of 24 kts. All their boats are equipped with Fish-Finders, GPS systems, Penn International and Shimano Reels and a wide variety of lures for a number of different species of game fish, the Sea Hunter is also equipped with Radar, auto pilot, fridge, stove, freezer, and is air conditioned in the cabin. All three vessels are fitted with coast guard approved safety equipment. There are a wide variety of game fish around the island with the more common being Blue Marlin, Sailfish, Wahoo, King Fish, Yellow Fin Tuna, Dorado, Mackerel and Barracuda. Hackshaw Boat Charters strongly believe in the conservation of St. Lucia's fish stocks and thus practice a strict Tag and release program of all BillFish, with the tag certificate being presented to the angler by the International Gamefishing Fish Association.
