If you enjoy succulent beef, then be assured that, as members of the Scotch Beef Club, our supply comes only from Scotland's most renowned, quality assured farms. The formal restaurant is elegant and dedicated to the culinary art. There you can choose from our daily changing table d'hote menu. For a true taste of the Borders you could begin with layered gateau of smoked haddock, ratatouille and Teviotdale cheese on basil infused leaves, followed by cannon of Border lamb sliced on an aubergine tian moated with a rosemary and thyme jus. To finish, Selkirk Bannock Pudding scented with Lemon accompanied with a Shortbread Ice Cream. Both lunch and supper are also offered in the relaxing atmosphere of the recently refurbished Bistro bar. There, you may find a menu to keep you from straying too far in the middle of the day, with lunch treats such as Steamed West Coast Mussels, or a Galantine of Quail stuffed with Apples and Apricots doused with an Orange and Chervil Dressing. Winter Breaks 2007-2008 at Burts Hotel. Good value, quality accommodation and outstanding food. During the months of December to March we will be offering a very attractive Dinner, Bed and Breakfast rate of 66.00 per person per night sharing a double-bedded and or twin-bedded room with private facilities and 74.00 per person, per night in single accommodation. The terms are based on a two-night stay to include a Three-Course Dinner in our award-winning Restaurant. Should you wish to stay a third night then the rate for the third night would be 62.00 per person, Dinner Bed and Full Scottish Breakfast. (6.00 supplement for Single Rooms). 'Sevens' tournaments are now held throughout the world and the Melrose annual event is one of the largest and most prestigious days in the rugby calendar. The rich Borders' history as a frontier land fired the imagination of Sir Walter Scott nearly 200 years ago, and many local historic characters filled his books. They successfully combine the provision of excellent food, comfortable accommodation, a great pub atmosphere, and a warm welcome with a high standard of management from hands-on owners. Anne and Graham Henderson have been running this hotel and pub for over 30 years, so we could desribe it as being fairly well established. Certainly the locals in the area and regular visitors to the Borders see it as an instituition. The distinctive white painted building sits firmly in the Market Square and the L-shaped bar, walls adorned with Scottish hunting and shooting scenes, attracts a lively collection of patrons. Nestling on the banks of the Tweed, in the shadow of the Eildon Hills, Melrose lies at the very heart of the Scottish Borders. It is one of Scotland's most ancient burghs, set in a valley which once attracted the Romans, who established the large fort of Trimontium. Christians from Lindisfarne followed in the 7th century, and built the predecessor of the current abbey, a little chapel at Old Melrose, two miles from the present town. In 1136, Kind David I founded the magnificent abbey whose ruins stand in the town today, where the heart of Robert the Bruce lies buried.
