Situated in the heart of the picturesque village of Cartmel at the Southern edge of the English Lake District, L'enclume's light, airy and contemporary
restaurant provides the perfect foil for an unforgettable fine dining experience. When Simon Rogan opened Lenclume in late 2002 with his partner Penny Tapsell, there was little evidence of what it was to become. With the development of Simon's unique creative talents L'enclume has evolved into one of the most celebrated and avant garde
restaurants in the country. Since opening, after working for some of the greatest names in the industry, Simons reputation as a master of his craft has grown year on year with a Michelin star, 4 AA rosettes, and a Catey (Catering industry Oscar awarded by Peers and Rivals) in 2005 alone. Renowned for his inventive modernist cooking and presentations, Simon champions local produce and works with local producers to bring the highest quality ingredients to the table. During the Summer months his signature is the use of the many unusual herbs and flowers that can be found in the wild rediscovering forgotten flavours now bought in to the 21st century. My aim is innovation and stretching boundaries by looking at unusual flavour combinations. Rules are there to be broken through careful research and experimentation, this though is not science. It is the startling array of ingredients from nature an abundance of wild flavours that are available within the realm of our own valley and beyond. Forever restless I am looking for tastes, textures and fragrances, visual presentations to stun with a little bit of humour added. To reduce dairy products and to eliminate heavy meat based stocks and sauces, instead letting the subtle herbs, roots and flowers take control I dont know that Simon Rogan isnt the best chef in the world10 out of 10. Giles Coren - Sunday Times. Rogans menu is a wild ride of crazy- sounding combinations, obscure ingredients and eccentric treatmentsthe most extraordinary meal I ate this year. Tracey MacLeod - The Independent. I will forever remember fondly with a certain amount of awe. The Guardian. The
